No more pot noodles

It’s fair to say that no-one is expecting students to become the next Gordon Ramsey or Nigella Lawson but taking an interest in cooking is something that will benefit you for the rest of your life.

You don’t have to live off beans on toast, Tesco meal deals or Nutella for the duration of your degree, but you won’t need to break the bank either. These are some easy, cheap ideas that can be followed and adapted for any necessary dietary requirements – feel free to swap the chicken for a plant-based protein or add in as many or little veg that you like

Creamy Pasta 

Ingredients
Chicken breast (or alternative protein of choice)
Quark
Pasta of your choice
Cheese of your choice
Vegetables i.e. bell peppers, onions, mushrooms
Oil

Method
1. Dice your chicken breast into small cubes
2. Heat the oil in the frying pan on a low-medium heat
3. Add the chicken
4. Season with salt, pepper and any other herbs and spices in your cupboard (paprika works really well with this)
5. Add the veg that you have chosen
6. Boil your water in a pan and cook the pasta according to the instructions
7. Chicken should be cooked after 20-minutes.
8. Drain the pasta and add the chicken/veg.
9. Stir in the quark and mix thoroughly.
10. Serve, top with grated cheese and enjoy!

Korma

Ingredients
Chicken breast (or alternative protein of choice)
Jar of korma sauce
Onions
Rice (can be microwavable, boil in the bag or raw)
Ready-made naan bread

Method
1. Dice your chicken into small cubes
2. Peel and slice the onions
3. Heat the oil in the frying pan on a low-medium heat
4. Add the chicken and
5. Season with salt pepper and any other herbs and spices in your cupboard
6. Add the jar of korma sauce and simmer on a low heat for 20-minutes, stir occasionally
7. Cook the rice according to the instructions
8. When the chicken and rice are done, cook the naan bread according to the instructions.
9. Serve and enjoy!

Stir Fry 

Ingredients
Chicken breast (or alternative protein of choice)
Vegetables i.e. bell peppers, onions, mushrooms, peas
Stir fry sauce (hoisin, chow mein, sweet & sour)
Noodles of your choice (medium egg noodles work well)

Method
1. Dice your chicken into small cubes
2. Peel and slice vegetables that you have chosen
3. Heat the oil in a frying pan on a low-medium heat
4. Add the chicken and veg, stir occasionally
5. After 5-7-minutes, add your chosen sauce and stir well
6. Cook the noodles according to the instructions
7. Serve and enjoy!
